The recipe is as simple as it gets. You can make it with just your hands and a spatula. The delicate cheese flavour of the biscuits is perfectly complemented by lemon kurd (custard with lemon juice).

1. Preheat the oven to 180 degrees. Cover two baking trays with parchment paper.
2. In the bowl of an electric mixer with the paddle attachment, cream the butter and sugar until light and fluffy. Add the egg and vanilla and mix until well combined. Add the flour and salt to the mixer and mix on medium to low speed until a dough forms.
3. Using a small biscuit scoop, shape the dough into balls of about 1 tablespoon each, rolling each between the palms of your hands to make them round. Place on the prepared baking sheets, leaving about 2 cm between each cookie. Use your finger, thumb or the back of a ½ teaspoon measuring spoon to make an indentation in the centre of each ball.
